Ham, Cheese and Asparagus Casserole
When you need a super easy, low carb treat that won't break the bank, consider making an asparagus casserole with ham and cheese! Depending upon your level of ambition, this recipe can be made with real chopped ham or chopped lunch meat. The onions can be eliminated if you're not in the mood for a good cry. Fresh or frozen asparagus will work just fine! Use a measuring cup or sprinkle handfuls of cheese. It's hard to screw this up!

Ingredients
- Two 12 Ounce Packages of Frozen Asparagus Cuts
- Half Stick of Butter
- Large Onion, Chopped
- Garlic Salt
- Cup of Shredded Mozzarella Cheese
- Cup of Chopped Ham (If you don't have real ham slices, lunch meat will work just fine.)
Directions
- Preheat oven to 350 degrees.
- On a large plate, thaw asparagus in the microwave for about three minutes. The cuts should be warmish, not hot.
- Use a paper towel to blot excess moisture from the asparagus.
- Transfer asparagus to a casserole dish. Sprinkle lightly with a touch of garlic salt.
- Melt butter in a large skillet. Pour about half the butter evenly over the asparagus, retaining the rest in the pan.
- Grill the chopped onion and ham until slightly golden.
- Pour ham and onion mixture into the casserole dish. Mix all ingredients with a rubber spatula.
- Spread mozzarella cheese over the top of the casserole.
- Bake until the mozzarella cheese turns golden brown. It should take about 15 or 20 minutes, depending on the desired level of browning.
